Sprouts are very versatile.  In general, the green sprouts (alfalfa, clover, broccoli, onion, and radish are examples) will go anywhere lettuce would go.  All of the green sprouts are fairly interchangeable but with different flavors. Bean sprouts cook up better than green sprouts.
